Creeping Crust Cobbler

I seem to have lost my copy of my mother’s Peach Cobbler recipe, but I found this very old recipe that may be the one that Mom originally used. The recipe calls for any canned fruit. I use peaches.

Creeping Crust Cobbler

Ingredients
  

  • 1/2 cup butter
  • 1 cup flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 2-4 cups canned fruit--any type--including juice (I use 2 large cans of peaches)

Instructions
 

  • Melt butter in deep 10" baking dish or casserole dish. While the butter melts, mix the flour, sugar, baking powder, and milk together, into a batter.
  • Pour batter into the baking pan/casserole dish, over butter (DO NOT STIR).
  • Dump the canned fruit (juice and all) into the baking pan/casserole dish (DO NOT STIR).
  • Bake at 350 degrees F. for 30 minutes, or until golden brown.
  • Enjoy!

    I can’t seem to rate or comment on the Lemon Chicken Picatta? I love that recipe. It is so delicious!! Hope if someone gives it a try, they love it as well.

    We had this cobbler for dessert tonight. David and I splurged and split half of it, and had ice cream on top. Judi and Harry ate the other half of the pan, also with ice cream. We are all FANS, now! 🙂

    The four servings were, in my opinion, just perfect. We could have stretched it further, but we were selfish and didn’t have it until after the kids had gone to bed. 😉

    I made it with four small cans of peaches (two were halves, and two were slices, two were light syrup, and two were heavy syrup). They all blended together very well.

    I think if I use the small cans again, I’ll cut down on the juice and only use half of it, plus I’ll probably add a bit of cinnamon, nutmeg, ginger, and just a smidgen of ground cloves, but it’s extremely luscious just the way it is. I just happen to like spiced-up stuff.

    It was SO easy to make. I have a small kitchenette, with two electric cooking appliances (a 14″ square frying pan, and the smaller of the two Presto Kettles (Judi has the larger one, which holds about a quart more, I believe…hers is the number 16006…mine is the 16003).

    I also have a small Black & Decker convection/toaster oven, which is GREAT for baking things like this cobbler (it holds a full quarter-sheet pan) and a great medium-strength microwave.

    I can’t use more than two appliances at a time, or it kicks the breaker for my kitchenette. So I got our dinner ready in the frying pan and the microwave, and mixed up the cobbler while I was waiting for them to finish cooking. Then I stuck the cobbler into the oven to bake while we were eating, so it was getting all lovely and fragrant while we watched TV for a bit. Absolutely perfect timing!

    Thank you very much for this recipe, Melody! It will now be a family favorite for a very long time, I’m sure! I’ll be trying it with other canned fruits (and some fresh ones next year, too, I hope). 🙂
